If you’d like to make them too, here’s the recipe:

Steam 3-4 potatoes (yellow or white, skin on) for between 45 minutes to 1 hour.

Take them out of steamer, peel skin, and slice them into four halves.

Next you’ll need a large bowl, placing the following ingredients into it:

Potatoes (mashed), 1 egg (beaten), 1/2 cup grated parmesan cheese, 1 1/2 cups of shredded cheese (mozzarella, Italian cheese recommended) 1 tablespoon of finely chopped parsley, salt, pepper, and paprika to taste.

Next: Mix ingredients well in the bowl.

Divide mixture into 20 croquettes (Use one spoonful of mix as one croquette, shape it in your hands, and place on sheet of parchment paper.

Once all 20 croquettes are rolled and ready, proceed to have three bowls:

Bowl #1: 1/4 cup of flour

Bowl #2: 2 eggs (beaten)

Bowl #3: 1/2-3/4 cup breadcrumbs

Roll each croquette in flour, dip each floured croquette in egg wash, and finally roll each in breadcrumbs. Place back on parchment paper once complete.

Next, in batches of 5 or 6, pan fry each croquette in hot oil until golden brown on all sides.

Place on plate, let cool, and enjoy!
