Most people pick their watermelon by using the knocking method, but there’s no science behind it.  The best way to find a ripe watermelon is to look for a yellowish spot underneath.  This is called the “field spot.” If that spot is light green or white instead, then it hasn’t ripened yet.

Watermelon Feta Salad

Ingredients:
– 4 cups of seedless watermelon, cubed
– 1 cup of feta cheese, crumbled
– 1/4 cup of fresh mint leaves, chopped
– 1 small red onion, thinly sliced
– 2 tablespoons of olive oil
– 1 tablespoon of balsamic glaze (optional)
– Salt and pepper to taste

Instructions:
1. **Prepare the Ingredients:**
– Cut the watermelon into bite-sized cubes.
– Thinly slice the red onion.
– Chop the fresh mint leaves.

2. **Combine Ingredients:**
– In a large bowl, combine the watermelon cubes, crumbled feta cheese, sliced red onion, and chopped mint leaves.

3. **Dress the Salad:**
– Drizzle the olive oil over the salad and toss gently to combine.
– If desired, drizzle with balsamic glaze for an extra layer of flavor.

4. **Season:**
– Season with salt and pepper to taste.

5. **Serve:**
– Serve immediately and enjoy this refreshing salad!

Tips:
– For added crunch, you can sprinkle some toasted pine nuts or almonds on top.
– If you prefer a bit more tang, you can add a squeeze of fresh lime juice.
